CHESTNUT MUSHROOM

Chestnut mushrooms grow in tight, glossy clusters with small rounded brown caps and firm stems. They have a nutty, slightly sweet flavor and a crisp texture that holds up exceptionally well during cooking.

They are slower growing than oysters but highly valued for their appearance and bite. Chestnuts are popular in high-end kitchens and specialty markets.


Complete Recipe — Chestnut Mushroom & Herb Risotto

Ingredients

  • 1 lb Chestnut mushrooms
  • 1 cup arborio rice
  • 4 cups warm vegetable stock
  • 1 small onion, minced
  • 2 tbsp butter
  • ¼ cup grated Parmesan
  • Fresh thyme

Instructions

  1. Sauté mushrooms in butter until lightly browned; set aside.
  2. In same pan, sauté onion, add rice and toast lightly.
  3. Add stock gradually, stirring until absorbed.
  4. Fold in mushrooms and thyme near the end.
Finish with Parmesan and butter.
