Ingredients

  • 1 lb Blue Oyster mushrooms
  • 2 tbsp butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp flour
  • ½ cup vegetable or beef broth
  • ½ cup sour cream
  • Salt and black pepper
  • Fresh parsley

Instructions

  1. Tear mushrooms into large strips.
  2. Melt butter in a pan over medium heat; sauté mushrooms until lightly browned.
  3. Add onion and cook until translucent; add garlic.
  4. Sprinkle flour over mixture and stir for 1 minute.
  5. Slowly add broth, stirring until thickened.
  6. Reduce heat, stir in sour cream, season to taste.
  7. Serve over egg noodles or mashed potatoes.
